...too delicious...<br />...<br />...too deliciousmr_frankmanhttps://www.blogger.com/profile/00777456221192666790noreply@blogger.comtag:blogger.com,1999:blog-4010478591191633760.post-1215772370764499682010-01-21T08:30:21.037-08:002010-01-21T08:30:21.037-08:00我焗的雞翼特別之處是只把一面焗焦(我稱之為「陰陽焗」)。道理很簡單:如兩面都焗焦,雞翼裏頭的肉汁已揮...我焗的雞翼特別之處是只把一面焗焦(我稱之為「陰陽焗」)。道理很簡單:如兩面都焗焦,雞翼裏頭的肉汁已揮發得七七八八,吃起來會有點乾硬;用陰陽焗,則一面已有足夠的焦香,雞肉卻仍嫩滑多汁。另外要注意的還有兩點:一,火要大,400-425F;二,一定要用全隻雞翼,用雞中翼的效果會差很遠(除非是巨型的雞中翼)。<br /><br />醃料沒甚麼特別,我用:豉油、鹽、五香粉、蒜粉、八角粉、胡椒粉(份量隨個人口味),不用糖(因為蜜糖已很甜),不用生粉(否則陰那面會黏糊糊的)。<br /><br />記緊要在焗盆上先塗油(或用不黏的焗盆),否則會黏底;焗到七成焦時塗蜜糖。W.
